    Adjust oven rack to the top position and preheat oven to 425°F. Wash and dry all produce.

    Toss parsnip , carrot , potatoes , and onion wedges on one side of a baking sheet with a drizzle of cooking oil , salt , and black pepper . Tip: line sheet with foil first for easier cleanup. Roast vegetables ⏱️ 20 minutes , or until tender and lightly browned.

Mix gently until just combined, then shape into two even meatloaves. Place on the remaining side of the baking sheet. Roast alongside vegetables ⏱️ 20 minutes , or until internal temperature reaches 160°F.

    In a medium pan over medium heat, melt butter . Stir in flour and cook ⏱️ 1 minute . Slowly whisk in water and beef stock concentrate . Cook, whisking constantly, until thickened ⏱️ 3 minutes .
