1Adjust rack to top position and preheat oven to 425°F. Wash and dry produce. Cut potatoes into ½-inch-thick wedges. Trim and thinly slice scallions , separating whites from greens; mince whites. 3While potatoes roast, in a large bowl , combine ground beef , panko breadcrumbs , sweet and smoky bbq seasoning , scallion whites, and a pinch of salt and pepper. Form into two 1-inch-tall loaves. In a small bowl , combine bbq sauce , a big squeeze of mandarin orange juice, and chipotle powder to taste. 4Once potatoes have roasted, remove sheet from oven. Carefully add broccoli to empty side; using tongs, toss with a drizzle of olive oil, salt, and pepper. Place ground beef loaves on same side of sheet as broccoli. Roast on top rack ⏱️ 15 minutes . -
5Once ground beef loaves and broccoli have roasted, remove sheet from oven. Carefully push potatoes together so they are overlapping; sprinkle with monterey jack cheese . Brush tops of ground beef loaves with 1 tbsp glaze each (save the rest for serving).
