2Wash and dry all produce. Halve, peel, and thinly slice half the red onion; finely chop the remaining. Zest and quarter the lime. Drain the corn. Peel and mince the garlic. -
3In a small bowl , combine the sliced onion, juice from half the lime, sugar, and a pinch of salt. Cover the bowl tightly with plastic wrap and microwave until the onion is bright pink ⏱️ 30 seconds . Set aside to pickle, tossing occasionally, until ready to serve. -
4In a second small bowl , combine the tex-mex paste, ketchup, half the cornstarch, half the southwest spice blend, and 1 tbsp water. -
5In a medium bowl , combine the coleslaw mix, mayonnaise, sour cream, lime zest, half the corn, the remaining southwest spice blend, juice from the remaining lime, and a pinch of sugar. Season generously with salt and black pepper. -
6Halve and toast the potato buns. While the buns toast, heat a drizzle of cooking oil in a large pan over medium-high heat. Add the chopped onion and a pinch of salt; cook, stirring, until softened and translucent ⏱️ 3 minutes . Add the garlic and cook, stirring, until fragrant ⏱️ 30 seconds . Stir in the black beans and their liquid, along with the sauce mixture. Using the back of a wooden spoon or spatula, roughly mash the beans, leaving some whole for texture. Cook until the beans are warmed through and the sauce has thickened ⏱️ 2 minutes . Remove from heat and stir in the butter. Season with salt and pepper to taste. -
7Divide the toasted buns between plates. Fill with as much bean filling and pickled onion (draining first) as desired. Serve the messy janes with the slaw on the side.
