2oven preheat to 450 degrees. Bring a large pot of water to a boil, seasoning generously with salt. Wash and dry produce. Drain and rinse cannellini beans. Peel and mince garlic. Zest and quarter lemon. -
3Once boiling, add penne pasta to large pot . Cook, stirring occasionally, until al dente ⏱️ 10 minutes . Reserve 1%cup pasta cooking water, then drain. > TIP: Ladle pasta water straight from pot if pasta isn't finished cooking. -
4Heat cooking oil in a large pan over medium-high heat. Add cannellini beans and cook, stirring, until warmed through ⏱️ 2 minutes . Add spinach and remaining cooking oil; cook, stirring, until wilted ⏱️ 3 minutes . Add garlic; cook, stirring, until fragrant ⏱️ 30 seconds . Season with salt and black pepper. -
5Reduce heat to medium-low. Stir in cheese roux concentrate, sour cream, half italian seasoning, ½%cup reserved pasta cooking water, butter, and juice from two lemon wedges. Cook, stirring occasionally, until bubbling ⏱️ 1 minutes . Remove from heat. -
6Stir drained penne pasta into large pan with filling until thoroughly coated. > TIP: If needed, stir in more pasta cooking water a splash at a time until pasta is coated in a creamy sauce. Transfer pasta to an 8x8-inch baking dish ; top with italian cheese blend. Bake on top rack until cheese is bubbling ⏱️ 3 minutes . -
7Garnish pasta bake with lemon zest; squeeze juice from remaining lemon wedges over top. Serve family style directly from baking dish.
