    radishes: 2 unit (thinly sliced), red bell pepper: 1 unit (thinly sliced), lime: 2 unit (cut into wedges), scallions: 2 unit (whites and greens separated), avocado: 1 unit (halved and pitted), flour tortillas: 4 unit, ground beef: 12 oz, cumin: 1 tsp, sour cream: 2 tbsp, salt: 1 tsp, pepper: 1 tsp, olive oil: 1 tbsp

    Wash and dry all produce. Preheat oven to 400°F. Core, seed, and thinly slice red bell pepper. Trim and thinly slice scallions, keeping greens and whites separate. Cut limes into wedges. Thinly slice radishes.

    Halve and pit avocado, scoop flesh into a small bowl . Add 2 tbsp scallion greens and a squeeze of lime juice. Mash with a fork until smooth. Season with salt and pepper.

    Heat a drizzle of olive oil in a large pan over medium-high heat. Add bell pepper and cook, tossing, until softened and slightly charred ⏱️ 5 minutes . Add scallion whites and cook ⏱️ 1 minute . Season with salt and pepper.

    Wrap flour tortillas in aluminum foil and place in oven to warm. Alternatively, heat each tortilla over a medium-low flame for ⏱️ 15 seconds per side until lightly charred. Set aside under a towel or foil.

    Add ground beef and cumin to the pan with veggies. Cook, breaking up meat, until browned and cooked through ⏱️ 4 minutes . Season with salt and pepper. Finish with a few squeezes of lime juice.

    Spread each tortilla with guacamole, top with beef mixture and radish slices. Serve with lime wedges and sour cream for dolloping on top. Enjoy!
