2Adjust oven rack to top position and preheat oven to 425°F. Wash and dry all produce. -
3Place a medium pot of water over high heat and bring to a boil. Add potatoes, cut into 1-inch chunks, and a pinch of salt. Cook until fork-tender ⏱️ 15 minutes . -
4While potatoes cook, heat a medium pan over medium-high heat. Add bacon; cook, turning occasionally and adjusting heat if browning too quickly, until crispy ⏱️ 8 minutes . Turn off heat; transfer to a paper-towel-lined plate. Wipe out pan. -
5Meanwhile, trim green beans if necessary. Drain corn; pat dry with paper towels. Trim and thinly slice scallions, separating whites from greens. -
6Heat a drizzle of cooking oil in the pan used for bacon over high heat. Add corn and cook, stirring occasionally, until golden and lightly charred in spots ⏱️ 5 minutes . Taste and season with salt and pepper. -
7Melt 2 tbsp of butter in the pan used for corn over medium heat. Add scallion whites; cook, stirring, until softened ⏱️ 2 minutes . Sprinkle with flour and stir vigorously to combine. -
8Drain potatoes well and return to the pot. Add sour cream and remaining 2 tbsp butter. TIP: If you like truffle, feel free to swap in the black truffle butter for the plain butter and skip serving it on the side!

9Mash potatoes until smooth and creamy. Stir in chicken stock concentrate and season with salt and pepper to taste.

10Season ranch steak with salt and pepper. Cook in a hot pan or under the broiler to desired doneness ⏱️ 8 minutes . Let rest ⏱️ 5 minutes before slicing.
