1Preheat oven to 425°F. -
2Wash and dry all produce. -
3Dice sweet potatoes into ½-inch cubes.sweet potatoes: 2 lbs -
4Zest lemon until you have 2 tsp; quarter lemon.lemon: 1 unit -
5Thinly slice chives .chives: 1 unit -
6Trim and halve brussels sprouts .brussels sprouts: 1 lb -
7Place sweet potatoes in a medium pot with enough salted water to cover by 2 inches.

14While brussels sprouts roast, place almonds in a medium pan over medium-high heat.almonds: ¼ cup

15Cook, stirring often, until lightly browned and fragrant ⏱️ 4 minutes .

16Turn off heat; transfer to a small bowl .

17Toss with lemon zest, salt, and pepper. Wipe out pan.

18Pat sirloin steak dry with paper towels; season all over with salt and pepper.sirloin steak: 1 unit
