2Adjust oven racks to top and middle positions and preheat oven to 425°F. Wash and dry all produce. -
3Toss fingerling potatoes on a baking sheet with a large drizzle of cooking oil, chopped rosemary, half the fry seasoning, salt, and black pepper. -
4Meanwhile, pat sirloin steak dry with paper towels and season all over with remaining fry seasoning, salt, and black pepper. -
5Melt butter in a medium pot over medium-high heat. Add half the shallot, a pinch of salt, and black pepper. Cook, stirring constantly, until softened ⏱️ 45 seconds . -
6Heat a drizzle of cooking oil in a large pan over medium-high heat. Add remaining shallot and cook, stirring, until softened ⏱️ 1 minute . -
7Thinly slice sirloin steak against the grain.
