    sirloin steak: 1 piece, fry seasoning: 1 tsp, balsamic vinegar: 2 tbsp, spinach: 2 c, crème fraîche: 2 tbsp, cream cheese: 2 tbsp, rosemary: 1 sprig, fig jam: 2 tbsp, beef stock concentrate: 1 unit, fingerling potatoes: 1 lb, parmesan cheese block: ¼ cup, garlic powder: ½ tsp, shallot: 1 unit, butter: 1 tbsp, black pepper: ½ tsp, salt: ½ tsp, cooking oil: 2 tbsp

    Adjust oven racks to top and middle positions and preheat oven to 425°F. Wash and dry all produce.

    Toss fingerling potatoes on a baking sheet with a large drizzle of cooking oil, chopped rosemary, half the fry seasoning, salt, and black pepper.

    Meanwhile, pat sirloin steak dry with paper towels and season all over with remaining fry seasoning, salt, and black pepper.

    Melt butter in a medium pot over medium-high heat. Add half the shallot, a pinch of salt, and black pepper. Cook, stirring constantly, until softened ⏱️ 45 seconds .

    Heat a drizzle of cooking oil in a large pan over medium-high heat. Add remaining shallot and cook, stirring, until softened ⏱️ 1 minute .
