    Adjust oven rack to middle position and preheat oven to 450°F. Wash and dry all produce. Toss potatoes with olive oil , garlic powder , salt , and black pepper . Spread on a lightly oiled baking sheet and roast ⏱️ 25 minutes .

    While potatoes roast, pat ranch steak dry with paper towels and season all over with salt and black pepper .

    Heat a drizzle of cooking oil in a large pan over high heat. Sear steak until browned and cooked to preference ⏱️ 8 minutes . Transfer to a plate and rest ⏱️ 5 minutes .

    Reduce heat to medium in the same pan. Add shallot and cook, stirring, until softened ⏱️ 2 minutes . Stir in beef stock concentrate , sherry vinegar , butter , and sugar . Simmer until sauce slightly thickens ⏱️ 2 minutes .
