    Bring a medium pot of salted water to a boil.

    Add lo mein noodles to the pot and cook, stirring occasionally, until al dente ⏱️ 5 minutes . Drain using a strainer and set aside.

    While the water heats, wash and dry all produce. Thinly slice the red onion and green bell pepper . Halve and deseed the tomato , then slice. Trim and separate the scallions whites and greens, then thinly slice both.

    Season the grass-fed rib-eye steak evenly with salt and black pepper . Heat a drizzle of cooking oil in a large pan over medium-high heat. Add the steak and cook, turning occasionally, until a crust forms ⏱️ 4 minutes . Turn off the heat, transfer the steak to a plate, and wipe out the pan with a paper towel.

    In a small bowl , whisk together soy sauce , sweet soy glaze , ketchup , sriracha , garlic powder , chicken stock concentrate , cornstarch , and 2 tbsp water until completely smooth.

    Heat another drizzle of oil in the same pan over medium heat. Add the tomato , green bell pepper , red onion , and scallion whites. Cook, stirring occasionally, until browned and crisp-tender ⏱️ 4 minutes .

    Pour the sauce mixture into the pan and simmer, stirring constantly with a whisk , until thickened ⏱️ 1 minute . Return the cooked noodles to the pan and toss everything together until evenly coated in the sauce.

    Slice the resting steak against the grain into thin strips. Divide the noodle mixture between plates, top with sliced steak, and shower with fresh scallion greens. Serve immediately.
