1Adjust oven racks to top and middle positions and preheat oven to 425°F. Wash and dry all produce. -
2Toss cauliflower florets on a baking sheet with a drizzle of olive oil , half the turkish spice blend , a pinch of salt , and a pinch of black pepper . 3Drain and rinse chickpeas , then toss with remaining olive oil, remaining Turkish Spice Blend, salt, and pepper. Spread on the baking sheet alongside cauliflower and roast for the last 5 minutes ⏱️ 5 minutes .chickpeas: 1 can -
4When cauliflower and chickpeas have 5 minutes remaining, massage microwavable grain blend inside its package and partially open the top vent. Microwave until warmed through ⏱️ 90 seconds .microwavable grain blend: 2 pkg -
5Dice tomato , halve dried apricots , and thinly slice scallions . Divide warm grain mixture between shallow bowls. Top with roasted cauliflower, chickpeas, tomato, and dried apricots in separate sections. Drizzle generously with harissa aioli and sprinkle with scallion greens.
