    Adjust racks to top and middle positions and preheat oven to 425 degrees. Wash and dry all produce.

    Toss cauliflower florets , shrimp , and chickpeas on a baking sheet with a drizzle of olive oil , half the turkish spice blend , salt , and black pepper . Roast until cauliflower is tender and shrimp is cooked ⏱️ 20 minutes .

    Dice tomato , chop dried apricots , and slice scallions into greens and whites.
