    Adjust rack to top position and preheat oven to 425°F. Wash and dry produce.

    Toss potatoes on a baking sheet with a large drizzle of cooking oil , garlic powder , salt , and black pepper . Roast ⏱️ 15 minutes .

    While potatoes roast, in a medium bowl , combine mini cucumber , carrot , rice wine vinegar , half the cilantro , 1 tsp sugar , and as much sliced red onion as you like. Season with a big pinch of salt and pepper.

    In a small bowl , combine mayonnaise and half the szechuan paste .

    In a second medium bowl , combine ground pork , remaining cilantro, remaining Szechuan paste, and 1 tsp sugar. Form mixture into two patties, each slightly wider than a burger bun. Cook pork in a large pan with a drizzle of oil until cooked through ⏱️ 5 minutes .

    Halve and toast brioche buns . Assemble burgers with buns, pork patties, Szechuan mayo, pickled slaw, roasted potatoes, and broccoli .
