Monterey Jack Burger

  • Monterey Jack cheese

    Preheat the oven to 450 degrees. Mince or grate garlic . Halve, peel, and thinly slice red onion into rings. Halve the zucchini lengthwise and widthwise, then slice into thin wedges (like steak fries). Wash and dry all produce.

    In a small bowl, combine mayonnaise and as much of the minced garlic as you like (start with 1/4 teaspoon and go up from there). Season with salt and black pepper . Set aside as aioli.

    Heat a drizzle of olive oil in a large pan over medium heat. Add the sliced onion and cook until lightly caramelized, ⏱️ 8 minutes . Add balsamic vinegar and sugar to the pan. Cook until reduced and syrupy. Season with salt and pepper. Transfer to a small bowl.

    In a medium bowl, toss the zucchini wedges with 1/2 tablespoon of the garlic aioli, panko breadcrumbs , dried oregano , and a large pinch of salt and pepper. Spread onto a lightly oiled baking sheet. Roast in the oven, flipping once, until golden brown ⏱️ 12 minutes .

    Wash and dry the pan used for onions. Heat a drizzle of oil in the same pan over medium-high heat. Form ground beef into 2 patties and season with salt and pepper on both sides. Cook patties for ⏱️ 4 minutes per side, until almost cooked to desired doneness. Top with Monterey Jack cheese , then cover to melt for about 1 minute.

    Split brioche buns and toast in the oven for ⏱️ 3 minutes . Spread with ketchup and assemble each burger with the patty, red onion marmalade, and any remaining aioli. Serve with the zucchini fries and enjoy!
