    Preheat oven to 450°F. Wash and dry all produce.

    Peel onion . Halve brioche buns .

    Heat cooking oil in a large pan over medium-high heat. Add onion and cook until tender and browned at the edges ⏱️ 2 minutes per side. Season with salt and black pepper .

    Form ground beef into two patties, each slightly wider than a bun. Don’t worry if your patties aren’t perfectly round, as those irregular edges will turn deliciously crispy. Season generously with salt and pepper.

    Cook patties in the large pan until browned and cooked to desired doneness ⏱️ 4 minutes per side. While patties cook, toast buns until golden brown. Spread as much smoky mustard as you like onto cut sides.
