3In a second small pot over medium heat, add three-bean blend and their liquid, ½ cup of the enchilada sauce (actually ½ cup total, but use ½ cup for the step - I'll specify ½ cup of the enchilada sauce), plus a pinch of salt and black pepper. 4Lay tortillas on a clean work surface. Place about ⅓ cup of cooked rice on the bottom third of each tortilla.
