2Adjust oven rack to top position and preheat oven to 450°F. Bring a large pot of salted water to a boil. Wash and dry all produce. -
3Toss zucchini on a baking sheet with a drizzle of cooking oil, half the italian seasoning, and a pinch of salt and black pepper. Roast in oven until tender and lightly charred ⏱️ 15 minutes . -
4Once water is boiling, add cavatappi pasta to pot. Cook, stirring occasionally, until al dente ⏱️ 10 minutes . Reserve a splash of pasta water before draining. -
5While pasta cooks, heat remaining cooking oil in a large pan over medium-high heat. Add onion and a pinch of salt and black pepper. Cook, stirring occasionally, until softened ⏱️ 5 minutes . -
6Add tomato paste and remaining italian seasoning to pan. Cook, stirring constantly, until fragrant ⏱️ 1 minute . Stir in chicken stock concentrate and italian chicken sausage. Cook, stirring, until sausage is heated through and sauce thickens ⏱️ 3 minutes . -
7Stir drained cavatappi pasta, roasted zucchini, sour cream, and butter into pan until thoroughly combined. If needed, stir in reserved pasta water, a splash at a time, until pasta is coated in a creamy sauce. Top with grated parmesan cheese and serve.
