    chickpeas: 1 can, lemon: 2 unit, mixed greens: 4 c, lentils: 1 can, garlic: 3 clove, italian seasoning: 1 tsp, mini cucumber: 2 unit, chicken cutlets: 2 pieces, tomato: 1 unit, parsley: 1 bunch, dill: 1 bunch, shallot: 1 unit, olive oil: 2 tbsp, salt: 1 tsp, black pepper: 1 tsp, water: 2 tbsp

    Preheat oven to 450 degrees. Wash and dry all produce.

    Place garlic in the center of a small piece of aluminum foil. Drizzle with olive oil and season with a pinch of salt and black pepper . Cinch into a packet and place on a baking sheet. Roast until soft ⏱️ 20 minutes .

    Carefully transfer garlic to a large bowl. Mash with a fork.

    To the bowl with the vinaigrette, add mixed greens , mini cucumber , tomato , dill , parsley , and roasted chickpeas and lentils. Toss until coated. Taste and season with salt and pepper if desired.
