1Wash and dry all produce. Halve, peel, and thinly slice onion . Clean and quarter cremini mushrooms . Roughly chop thyme . Grate mozzarella cheese and crumble feta cheese . Tear pizza dough into two equal portions. 2Heat olive oil in a large skillet over medium heat. Add sliced onions, garlic powder , salt , and black pepper . Cook, stirring occasionally, until deeply caramelized and tender ⏱️ 15 minutes . 3Wipe out skillet and return to medium-high heat. Add mushrooms and cook until browned and any released liquid has evaporated ⏱️ 5 minutes . Season with salt and pepper, then stir in half the chopped thyme. -
4Line a baking sheet with parchment paper . Stretch each dough portion into a 10-inch oval on the prepared sheet. -
5Spread the caramelized onion mixture evenly over each flatbread. Top with mozzarella cheese. Bake until crust is golden brown and cheese is bubbly ⏱️ 14 minutes . -
6Remove from oven and immediately top each flatbread with feta cheese, sautéed mushrooms, and remaining fresh thyme. Let rest ⏱️ 2 minutes before slicing and serving.
