    Preheat oven to 450°F. Wash and dry all produce.

    In a small bowl , combine shallot , white wine vinegar , water , sugar , salt , and black pepper . Microwave until shallot is slightly softened and sugar is mostly dissolved ⏱️ 2 minutes . Set aside.

    Place flatbreads on a baking sheet and rub all over with cooking oil ; season with salt and black pepper . Toast in oven until crisp ⏱️ 3 minutes .

    While flatbreads toast, heat cooking oil in a large pan over medium-high heat. Add scallions , ground chicken , ras el hanout , half garlic powder , salt , and black pepper ; cook, stirring occasionally, until chicken is cooked through ⏱️ 5 minutes .

    Once flatbreads are toasted, remove baking sheet from oven. Carefully flip flatbreads dimpled sides up; evenly spread with chicken mixture and sprinkle with cheddar cheese . Return to oven until cheese is melted and bubbly ⏱️ 3 minutes .

    In a second small bowl , combine sour cream , remaining garlic powder , sumac , a pinch of salt , and black pepper . Add water at a time until mixture reaches a drizzling consistency.
