    Adjust oven rack to top position and preheat oven to 450°F. Wash and dry all produce. Peel and mince ginger . Heat a drizzle of cooking oil in a small pot over medium-high heat. Add ginger and cook, stirring, until fragrant ⏱️ 30 seconds . Stir in water , veggie stock concentrate , and half the soy sauce . Bring to a boil, then stir in quinoa . Cover and reduce heat to low. Simmer until quinoa is tender and water has evaporated ⏱️ 15 minutes . Keep covered off heat until ready to serve.

    While quinoa cooks, place mini cucumber under a plate and press down until it splits open. Cut into 1-inch pieces. Trim and cut broccoli florets into bite-size pieces if necessary. In a medium bowl , combine rice wine vinegar , sugar , and ½%tsp salt . Stir in cucumber and half the sesame seeds . Set aside, stirring occasionally.

    In a large bowl , whisk together half the sweet thai chili sauce , remaining soy sauce, and a drizzle of oil. Add broccoli and toss to coat. Spread evenly on a foil-lined baking sheet . Roast until browned and tender ⏱️ 12 minutes . Transfer roasted broccoli back to the large bowl.

    Meanwhile, in a small bowl , combine mayonnaise and remaining chili sauce. Whisk in water 1%tsp at a time until drizzling consistency is reached. Season with salt to taste.

    Heat a drizzle of oil in a medium pan over medium-high heat. Once hot, crack eggs into pan and cover. Fry to your desired doneness ⏱️ 3 minutes . Season with black pepper and salt. Turn off heat.

    Fluff quinoa with a fork and stir in butter until melted. Season with salt. Divide quinoa between bowls. Top with broccoli, smashed cucumber, and fried eggs. Drizzle generously with spicy mayo. Garnish with remaining sesame seeds and serve.
