  • grater

    Wash and dry all produce. Bring a large pot of salted water to a boil. Halve, peel, and grate half the yellow onion on the large holes of a grater . Chop the other half. Mince or grate garlic . Pick and roughly chop enough parsley leaves to yield 2 tbsp. Place panko breadcrumbs and milk in a small bowl and let soak.

    In a large bowl , mix together ground turkey , the grated onion, half the garlic, half the parmesan cheese , half the parsley, and half the tuscan heat spice . Season with salt and black pepper . Once the panko is fully soaked, blend it into the turkey mixture using your hands. Shape the mixture into four large meatballs.

    Heat a large drizzle of olive oil in a large pan over medium-high heat. Add the meatballs and cook until the bottoms are browned ⏱️ 2 minutes . Flip and cook on the opposite side until browned ⏱️ 2 minutes . Push the meatballs toward one side of the pan.

    Add the chopped onion to the empty side of the pan. Cook, tossing occasionally, until slightly softened ⏱️ 2 minutes . Stir in crushed tomatoes and the remaining garlic and Tuscan heat spice. Continue stirring until the tomatoes boil ⏱️ 3 minutes . Push the meatballs back toward the center of the pan. Lower heat to medium and cover the pan. Let simmer until the meatballs are cooked through ⏱️ 7 minutes .

    Once the water is boiling, add penne pasta to the pot. Cook, stirring occasionally ⏱️ 5 minutes , then add broccoli florets . Continue cooking until the broccoli is tender and the penne is nearly al dente ⏱️ 4 minutes . Remove the broccoli from the pot with a slotted spoon and transfer to a medium bowl . Add 1 tbsp butter to the bowl and toss to melt. Season with salt and pepper. Drain the penne.

    Sprinkle mozzarella cheese over the meatballs once cooked through. Cover the pan and let the mozzarella melt ⏱️ 1 minute . Push the meatballs toward one side, then stir the penne into the sauce in the pan. Season with salt and pepper. Divide the penne and sauce between plates and top with the meatballs. Sprinkle with the remaining Parmesan and parsley. Serve with the broccoli on the side.
