    Adjust oven rack to top position and preheat oven to 450°F. Wash and dry all produce.

    In a baking sheet , toss potatoes with a drizzle of olive oil , salt , and black pepper . Roast on the top rack until browned and tender ⏱️ 18 minutes .

    While potatoes roast, in a medium bowl , combine radishes , coleslaw mix , mayonnaise , juice from half the lime , a pinch of sugar , salt , and black pepper . Set aside.

    Pat chicken thighs dry with paper towels. Place between two pieces of plastic wrap and pound with a meat mallet or heavy-bottomed pan until about ½ inch thick.

    Heat a ¼-inch layer of cooking oil in a large pan over medium-high heat. Season chicken with garlic powder , salt , and black pepper , then coat evenly with panko breadcrumbs .

    Halve and toast potato buns . Fry chicken cutlets in hot oil until golden and cooked through ⏱️ 4 minutes per side. Drain on paper towels. Assemble sandos with baby lettuce , chicken, slaw, katsu sauce , and sour cream . Serve with roasted potatoes.
