  • flatiron steak

    Bring a large pot of water to a boil with a large pinch of salt. Once boiling, add brown rice and cook ⏱️ 30 minutes . Once tender, drain and return to pot. Cover and allow to steam.

    Peel carrots and shave into ribbons lengthwise using a peeler. Repeat with zucchini . Trim scallions , cut in half lengthwise, then cut into 3-inch pieces. Thinly slice scallions lengthwise into a julienne. Thinly slice button mushrooms . Mince garlic . Peel and mince ginger .

    In a medium bowl , combine soy sauce , minced garlic, minced ginger, and sugar . Thinly slice flatiron steak against the grain, toss into the marinade, and let sit ⏱️ 10 minutes .

    In a small bowl , toss sliced scallions with white wine vinegar and a pinch of salt. Set aside.

    Heat ½ tbsp olive oil in a large skillet over medium heat. Add carrot ribbons, season with salt and pepper, and cook, tossing, ⏱️ 5 minutes until crisp-tender. Remove and set aside. Repeat with zucchini ribbons. Set aside. Add sliced mushrooms to the skillet, cook ⏱️ 5 minutes , tossing, until golden brown and slightly crispy. Season with salt and pepper.

    Heat another ½ tbsp olive oil in the same skillet over medium-high heat. Working in batches, sear each slice of steak ⏱️ 20 seconds per side until browned. Set aside. If using, fry egg sunny-side up in a separate pan during this time.

    Pour remaining marinade into the skillet and simmer ⏱️ 2 minutes until slightly thickened.

    Divide rice between bowls. Arrange steak, zucchini, carrots, and mushrooms on top. Top with pickled scallions, sesame seeds, and fried eggs if using. Drizzle with reduced marinade. Serve immediately.
