2In a small pot , combine white rice and water. Bring to a boil, then cover and reduce to a low simmer; cook until tender ⏱️ 15 minutes . -
3While rice cooks, wash and dry produce. -
4Heat a drizzle of cooking oil in a large pan over medium-high heat. Add onion, scallion whites, and red cabbage and carrot mix; season with salt and black pepper. Cook, stirring, until onion is translucent and veggies are slightly tender ⏱️ 5 minutes . Turn off heat; transfer veggie mixture to a medium bowl . Wipe out pan. -
5Heat a large drizzle of cooking oil in pan over medium-high heat. Add kimchi and a pinch of sugar; cook, stirring constantly, until warmed through ⏱️ 2 minutes . -
6To pan with rice mixture, add cooked veggies, peas, gochujang sauce, sweet soy glaze, vegetarian oyster sauce, and garlic powder; stir to combine. Press into an even layer; cook, undisturbed, until rice is slightly crispy ⏱️ 3 minutes . Turn off heat. -
7Divide fried rice between bowls. Top each with a fried egg if desired. Garnish with sesame seeds, scallion greens, and as much remaining sesame oil and sweet soy glaze as you like. Serve.
