    Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. In a medium bowl , combine organic ground beef , cumin , ½ tsp dried oregano , ½ tsp salt , and a pinch of black pepper . Form into 6 to 8 meatballs. Place meatballs on a baking sheet lightly coated with cooking oil and butter . Roast on top rack until browned and cooked through ⏱️ 15 minutes . Wash out bowl.

    While meatballs roast, quarter lemon . Quarter tomato and slice into ½-inch-thick quarter-moons. Trim and slice mini cucumber into ½-inch-thick rounds. In the cleaned medium bowl , whisk together remaining dried oregano, juice from half the lemon, and a pinch of salt and pepper to taste. Add tomato and cucumber; toss until well coated. Refrigerate until ready to serve.
