    Adjust rack to top position (top and middle positions for 4 servings) and preheat oven to 425 degrees. Wash and dry all produce. Cut potatoes into ½-inch-thick wedges. Trim green beans if necessary. Trim and thinly slice scallions , separating whites had greens; mince the whites. Halve mandarin orange .

    Toss potatoes on one side of a lightly oiled baking sheet that you've greased with cooking oil and a large drizzle of olive oil , season with salt and black pepper . (For 4 servings, spread potatoes out across entire sheet.) Roast on top rack for ⏱️ 10 minutes .

    While potatoes roast, combine ground pork , panko breadcrumbs , sweet and smoky bbq seasoning , the separated scallion whites, ¾ tsp salt from the salt , and a pinch of black pepper in a large bowl . Form into two 1-inch-tall loaves (four loaves for 4 servings). In a small bowl , combine bbq sauce , a big squeeze of juice from the halved mandarin, and chipotle powder to taste; season with salt and pepper and add more mandarin juice or chipotle powder if desired.

    Once potatoes have roasted 10 minutes, remove baking sheet from oven. Carefully add green beans to the empty side; using tongs, toss with a drizzle of olive oil , salt, and pepper. Place the meatloaves on the same side as the green beans. (For 4 servings, leave potatoes roasting on the first sheet; place meatloaves and green beans on a second, lightly oiled sheet and roast on the middle rack.) Roast on top rack for ⏱️ 15 minutes .

    When the meatloaves and green beans have roasted 15 minutes, remove the sheet from the oven. Push the potato wedges together so they overlap; sprinkle with monterey jack cheese . Brush the tops of each meatloaf with 1 TBSP of the prepared glaze from the small bowl (save the remaining glaze for serving). Return for the oven until the glaze is tacky, cheese has melted, and the meatloaves are cooked through, about ⏱️ 2 minutes to ⏱️ 3 minutes more.

    Remove from the oven. Divide the meatloaves, potatoes, and green beans between plates. Drizzle the remaining glaze from the bowl over the meatloaves. Garnish with the reserved scallion greens and serve.
