    potatoes: 2 medium, onion: 1 medium, asparagus: 8 oz, ground beef: 1 lb, garlic: 2 cloves, beef stock concentrate: 1 packet, ketchup: 3 tbsp, broccoli: 8 oz, panko breadcrumbs: ¼ cup, parsley: ¼ cup, flour: 1 tbsp, salt: 1 tsp, cooking oil: 2 tbsp, black pepper: ½ tsp, butter: 1 tbsp

    Adjust oven racks to top and middle positions and preheat oven to 425°F. Wash and dry all produce.

    Toss potatoes on a baking sheet with a drizzle of cooking oil, salt, and pepper.

    Meanwhile, in a large bowl , combine ground beef, minced garlic, panko breadcrumbs, half the minced onion, half the parsley, salt, and pepper. Gently combine, then form into two 1-inch-tall loaves. Place on one side of a second baking sheet.

    Toss broccoli on opposite side of sheet from loaves with a drizzle of cooking oil, salt, and pepper.

    Meanwhile, melt butter in a medium pan over medium heat. Add remaining minced onion; cook, stirring, until softened ⏱️ 4 minutes .

    Slice meatloaves crosswise.
