2Adjust oven racks to top and middle positions and preheat oven to 425°F. Wash and dry all produce. -
3Toss potatoes on a baking sheet with a drizzle of cooking oil, salt, and pepper. -
4Meanwhile, in a large bowl , combine ground beef, minced garlic, panko breadcrumbs, half the minced onion, half the parsley, salt, and pepper. Gently combine, then form into two 1-inch-tall loaves. Place on one side of a second baking sheet. -
5Toss broccoli on opposite side of sheet from loaves with a drizzle of cooking oil, salt, and pepper. -
6Meanwhile, melt butter in a medium pan over medium heat. Add remaining minced onion; cook, stirring, until softened ⏱️ 4 minutes . -
7Slice meatloaves crosswise.
