2Adjust oven rack to top position and preheat oven to 425°F. Wash and dry all produce. Halve potatoes lengthwise and slice crosswise into ¼-inch half-moons. Trim, peel, and cut carrots diagonally into ¼-inch pieces. Roughly chop parsley. Quarter gouda cheese. In a small bowl , combine ketchup, apricot jam, and sriracha. Set glaze aside. -
3In a large microwave-safe bowl, combine butter, garlic powder, a pinch of salt, and a pinch of black pepper. Cover and microwave until melted ⏱️ 30 seconds . Remove wrap and stir until thoroughly combined. Add potatoes, carrots, and parsley to the butter mixture. Toss until coated. Season with salt and pepper. Transfer veggies to one side of a lightly oiled large baking sheet . Roast on top rack ⏱️ 5 minutes . Wash out the bowl. -
4In the same bowl, soak panko breadcrumbs with pork ramen stock concentrate and water. Stir until pasty. Add ground beef, fry seasoning, ½ tsp salt, and pepper. Mix to combine. Divide mixture into two ½-inch-thick rounds. Place gouda cheese in the center of each. Gently fold meat around cheese to seal, forming 1-inch-tall loaves. -
5Remove sheet from oven. Place meatloaves seam-side down on the empty side of the sheet. Transfer half the glaze to a second small bowl and reserve. Brush meatloaves with remaining glaze. Roast on top rack ⏱️ 13 minutes . -
6Remove sheet from oven and carefully brush meatloaves with reserved glaze. Return to oven and roast until meatloaves are cooked through, veggies are tender, and glaze is tacky ⏱️ 2 minutes . -
7Divide veggies and meatloaves between plates and serve.
