Pork Ramen Bar

    Bring a large pot of salted water to a boil. Wash and dry all produce. Trim and thinly slice scallions , reserving the greens in a small bowl for serving. Peel and grate ginger . TIP: If you added any other items to your meal (apps, sides, and/or dessert), you can get started on them now!

    Heat a drizzle of cooking oil in a medium pot over medium-high heat. Add ground pork and scallion whites; season with soy sauce , sugar , and a pinch of black pepper . Cook, breaking up meat into pieces, until browned and cooked through, ⏱️ 4 minutes . Turn off heat; transfer the pork mixture to a medium bowl and cover to keep warm until serving. (You'll use the pot again.)

    Heat a drizzle of oil in the same pot (no need to wipe it out) over medium-high heat. Add garlic powder and a small pinch of ginger into; cook, stirring constantly, until fragrant and ginger begins to brown slightly, **15-20 seconds**. Add 3½ cups water, chicken stock concentrate , pork ramen stock concentrate , and a bit more soy sauce (about 2 tsp). Stir, cover, and bring to a boil, then reduce to a simmer until broth is fragrant and flavors have melded, **8-10 minutes**. (Save any remaining soy sauce for another use.)

    Meanwhile, use the once-boiling water to cook ramen noodles until al dente, **1-2 minutes**. Drain, then rinse under cold water for **30 seconds**. Toss with a touch of oil to prevent sticking. Set aside.

    In a separate small bowl , stir together hoisin sauce and 1 tsp water until smooth.

    Serve broth, noodles, shredded carrots , bok choy and cabbage , the pork mixture, scallion greens, sriracha , and the hoisin mixture family-style so everyone can build their own ramen bowls. Note: ground pork is fully cooked when internal temperature reaches 160°F. Feel free to microwave the fully assembled bowl for 60-90 seconds to soften vegetables as desired.
