    Wash and dry all produce. Halve, peel, and mince garlic . Chop scallions and bok choy and napa cabbage .

    In a large pot , combine ground pork , water , chicken stock concentrate , pork ramen stock concentrate , and half the soy sauce . Cover and bring to a simmer.

    Once broth is simmering, reduce heat to medium. Add ramen noodles , bok choy and napa cabbage, and spinach ; simmer, stirring, until noodles are tender and pork is cooked through ⏱️ 2 minutes .

    In a small bowl , mix remaining soy sauce, sesame oil , chili flakes , sesame seeds , minced garlic, and chopped scallions to make chili garlic oil. Set aside.

    Divide ramen between large soup bowls. Top with crispy fried onions and stir in as much chili garlic oil as you like.
