    Preheat oven to 425 degrees F. Place butter in a small bowl and microwave until melted ⏱️ 30 seconds .

    Pour marinara sauce into a large bowl . Stir in gnocchi , half the melted butter, water , a pinch of salt , and a pinch of chili flakes until thoroughly combined. Divide mixture evenly between oven-ready tray .

    In the small bowl with remaining melted butter, stir panko breadcrumbs , mozzarella cheese , a large drizzle of olive oil , salt , and black pepper . Pat chicken cutlets dry, drizzle with olive oil, and season all over with italian seasoning , salt, and pepper. Place one cutlet in each tray on top of gnocchi mixture.

    Sprinkle panko mixture evenly over each cutlet. Bake until chicken is cooked through and topping is golden brown ⏱️ 25 minutes . Let cool ⏱️ 5 minutes . Divide between plates, top with more chili flakes if desired, and serve.
