    Preheat oven to 425°F. Wash and dry all produce. Trim and halve zucchini lengthwise, then cut into ½-inch half-moons. Trim, peel, and cut carrot on a diagonal into ½-inch pieces. Halve, peel, and cut red onion into ½-inch wedges; mince a few wedges until you have 2 tbsp. Dice tomato into ½-inch pieces.

    Toss zucchini, carrot, and remaining onion wedges on a baking sheet with a drizzle of cooking oil and a pinch of salt and black pepper . Roast on the top rack, tossing halfway through, until lightly browned and tender, ⏱️ 20 minutes .

Slowly stir flour mixture into pan and cook, stirring constantly, until sauce has thickened, ⏱️ 1 minute . Remove from heat; stir in butter until melted and combined.
