    Preheat oven to 425°F. Wash and dry all produce. Trim, peel, and cut carrots on a diagonal into ½-inch-thick pieces. Toss with olive oil , salt , and black pepper . Spread on a baking sheet and roast until tender ⏱️ 15 minutes .

    Pat pork chops dry with paper towels and season all over with dried thyme , half the fry seasoning , salt, and pepper. Heat a large pan over medium-high heat. Add pork and cook until golden and cooked through ⏱️ 5 minutes per side. Transfer to a plate and let rest.

    While pork cooks, place potatoes in a medium pot , cover with water, and bring to a boil. Cook until fork-tender ⏱️ 10 minutes . Drain, reserving cooking liquid. Return potatoes to pot, add sour cream and 2 tbsp butter . Mash until smooth and creamy, adding splashes of reserved potato cooking liquid as needed. Taste and season with salt and pepper.

    In the pan used for pork, heat 1 tbsp butter and a drizzle of oil over medium heat. Add apple , onion , minced garlic , remaining fry seasoning, 1 tsp sugar , salt, and pepper. Cook, stirring, until softened ⏱️ 4 minutes . Stir in chicken stock concentrate and simmer until slightly thickened ⏱️ 2 minutes .

    Slice pork crosswise. Serve chops alongside mashed potatoes and roasted carrots, topped with the warm apple and onion pan sauce.
