    sour cream: 2 tbsp, crushed tomatoes: ½ cup, cream cheese: 2 oz, lemon: 1 unit, penne pasta: 4 oz, parmesan cheese: 2 tbsp, chili flakes: ½ tsp, scallions: 2 units, bell pepper: 1 unit, italian pork sausage: 8 oz, cooking oil: 1 tbsp, butter: 1 tbsp, salt: 1 tsp, black pepper: ½ tsp

    Bring a large pot of salted water to a boil. Wash and dry produce.

    Heat a drizzle of cooking oil in a large pan over medium-high heat. Add bell pepper and scallions(whites); cook, stirring, until slightly softened ⏱️ 4 minutes . Season with salt and black pepper.

    Remove italian pork sausage from casing if necessary; discard casing. Add to pan; cook, breaking up meat into pieces, until browned and cooked through ⏱️ 6 minutes .

    Once water is boiling, add penne pasta to pot. Cook, stirring occasionally, until al dente ⏱️ 11 minutes .

    Add half the crushed tomatoes to pan with sausage mixture and cook until softened ⏱️ 2 minutes . Reduce heat to medium low. Stir in cream cheese, sour cream, butter, and a splash of pasta water until smooth and creamy.

    Divide pasta between bowls. Sprinkle with scallions(greens), remaining parmesan cheese, and a pinch of chili flakes if desired. Serve with lemon(wedges) on the side.
