1Wash and dry arugula .arugula: 2 c

2In a medium bowl , toss together arugula and honey dijon dressing until evenly coated.honey dijon dressing: 2 tbsp

3Lay flour tortillas on a clean work surface. Divide prosciutto , italian cheese blend , and as much dressed arugula as you like between tortillas.flour tortillas: 4 unit, prosciutto: 4 oz, italian cheese blend: ½ cup

4Starting from the bottom of each tortilla, tightly roll into tubes; trim and discard curved edges. Slice each roll-up crosswise into 6-8 pieces.

5Let a bit of air out of bag with crispy fried onions ; lightly crush.crispy fried onions: 2 tbsp

6Divide roll-ups between plates, placing cut sides down. Pile any remaining arugula on the side. Garnish roll-ups and arugula with crispy fried onions and serve.
