1Wash and dry all produce.

2Halve, peel, and thinly slice half the red onion . Halve lime . Drain and rinse kidney beans . Halve tomato and cut into wedges. Roughly chop cilantro .red onion: 1 unit, lime: 1 unit, kidney beans: 1 c, tomato: 1 unit, cilantro: 1 unit

3In a small bowl , combine sliced red onion, lime juice, and a pinch of salt. Cover with plastic wrap and microwave until slightly softened ⏱️ 30 seconds . Stir to combine and set aside to pickle.

4Heat a large pan over medium-high heat. Add pulled pork and kidney beans. Cook, breaking up meat into pieces, until browned and warmed through ⏱️ 3 minutes . Add BBQ sauce and cook, stirring occasionally, until coated ⏱️ 2 minutes .pulled pork: 2 c, BBQ sauce: ¼ cup

5Meanwhile, wrap flour tortillas in damp paper towels and microwave until warm and pliable ⏱️ 20 seconds .flour tortillas: 4 unit

6Arrange tortillas on a clean work surface. Place pulled pork and beans on bottom two-thirds of each tortilla. Top with tomato, cilantro, and as much pickled onion as you like (draining first). Fold bottom side over filling, then fold left and right sides toward center. Roll up to form wraps.
