2Wash and dry all produce.

3Slice the top off the long green pepper; core it and cut half into ¼-inch-thick rings. Quarter the lime.

4In a medium microwave-safe bowl , combine the green pepper rings, white wine vinegar, 1%tbsp water , ½%tsp sugar, and ¼%tsp salt . Cover with plastic wrap and microwave until the pepper softens ⏱️ 1 minutes . Stir and set aside.water, salt

5In a small bowl , combine mayonnaise, ¼%tsp cajun spice blend, and the juice from 1 lime wedge.

6In a large pan , cook pulled pork over medium-high heat, breaking it up into pieces, until warmed through ⏱️ 3 minutes .

7Stir in ketchup and the remaining cajun spice blend. Cook, stirring occasionally, until warmed and evenly coated ⏱️ 2 minutes . Turn off heat and stir in 1%tbsp water.

8Sprinkle the pulled pork mixture with mozzarella cheese. Cover and let stand until the cheese melts ⏱️ 1 minutes .

9Meanwhile, halve the ciabatta and toast until golden.

10Spread the lime mayo onto the cut sides of the top ciabatta halves. Top the bottom halves with the cheesy pulled pork and pickled green peppers (drained). Close sandwiches and serve.
