    Wash and dry all produce.

    In a small bowl , combine red onion , half the tomato , half the cilantro , and juice from half the lime . Season with salt and black pepper .

    Heat a drizzle of olive oil in a large pan over medium-high heat. Add sliced onion, long green pepper , and a big pinch of salt. Cook, stirring occasionally, until browned and tender ⏱️ 8 minutes .

    Place flour tortillas on a clean work surface; sprinkle one half of each tortilla with Mexican cheese blend and pepper jack cheese . Top with cooked shrimp and the roasted vegetables.

    Fold tortillas over; wash out pan used for veggie filling and return to medium-high heat with a drizzle of olive oil.

    Cut tortillas into wedges; divide between plates and top with guacamole and salsa. Drizzle with sour cream and southwest spice blend . Serve with remaining lime wedges on the side.
