    Adjust oven rack to the top position and preheat oven to 425°F. Wash and dry all produce.

    Drain any excess liquid from the diced skinless dark meat chicken . In a large pan , heat cooking oil over medium-high heat. Add green bell pepper , onion , and chicken. Season with blackening spice , fry seasoning , salt , and black pepper . Cook until chicken is cooked through and vegetables are tender ⏱️ 8 minutes . Set aside.

    Place flour tortillas on a clean work surface. Evenly sprinkle mozzarella cheese onto one half of each tortilla. Top with the chicken filling, then top chicken with mexican cheese blend . Fold tortillas in half to create quesadillas.

    Lightly coat a baking sheet with cooking spray . Place quesadillas on the sheet and bake on the top rack until golden brown ⏱️ 15-20 minutes .

    While quesadillas bake, in a medium bowl , combine mango chutney , half the cilantro , and juice from two lime wedges. Season with salt and pepper.
