    Wash and dry all produce.

    Halve, peel, and thinly slice half the red onion . Halve the lime . Drain the cannellini beans . Roughly chop the cilantro .

    In a small microwave-safe bowl , combine the sliced onion, juice from the lime, and a pinch of salt . Cover with plastic wrap and microwave for ⏱️ 30 seconds . Stir to combine and set aside to pickle.

    Heat a large pan over medium-high heat. Add the pulled pork and cook, breaking it into pieces, until warmed through, ⏱️ 2 minutes . Add the bbq sauce and beans; cook, stirring occasionally, until coated, ⏱️ 1 minute .
