    preheat oven on the top rack. Wash and dry all produce. Cut potatoes into wedges, toss with 1%tbsp cooking oil, salt, and pepper, then spread on a baking sheet and roast until crispy ⏱️ 20 minutes .

    Pat chicken cutlets dry with paper towels. Place between plastic wrap; pound with a meat mallet or heavy pan until ⅓ inch thick. Season all over with salt , black pepper , and remaining Cajun Spice Blend .

    In a medium bowl , mix flour and cornstarch . Dredge chicken in mixture, shaking off excess. Heat a ⅓-inch layer of cooking oil in a large pan over medium-high heat. Once oil sizzles when tested with a pinch of flour mixture, add coated chicken. Cook until golden brown and cooked through ⏱️ 4 minutes per side. Fry in batches if necessary; lower heat if chicken browns too quickly.
