    Season lamb chops with salt and black pepper . Heat a drizzle of cooking oil in a large skillet over medium-high heat. Sear lamb chops ⏱️ 3 minutes per side until browned, then remove to a plate. In the same skillet, cook sliced button mushrooms until browned ⏱️ 5 minutes . Set aside.

    While mushrooms cook, halve, peel, and finely dice half the onion . Trim, peel, and finely dice the carrot . Core, deseed, and finely dice the green bell pepper . Mince the parsley .

    Bring a medium pot of salted water to a boil. Once boiling, add the orzo pasta . Cook, stirring occasionally, until al dente ⏱️ 10 minutes . Reserve ½%cup pasta water before draining.

    While orzo cooks, heat a drizzle of cooking oil in a large pan over medium-high heat. Add diced onion , carrot , green bell pepper , and italian seasoning . Cook, stirring occasionally, until veggies begin to soften and lightly brown ⏱️ 5 minutes . Season with salt and black pepper .

    To the pan with veggies, add lentils , marinara sauce , veggie stock concentrate , and ⅓%cup water. Reduce heat to low and simmer until veggies are tender and sauce has thickened ⏱️ 7 minutes .

    Add half the parsley to the pot with orzo pasta and stir to combine.
