Sizzling Beef Stir-Fry

  • baby bok choy
    1 bunch
  • beef sirloin tips
    12 oz
  • garlic
    2 cloves
  • ginger
    1 tbsp
  • jasmine rice
    ½ cup
  • olive oil
    2 tbsp
  • pepper
    1 tsp
  • red bell pepper
    1 unit
  • red onion
    1 unit
  • salt
    1 tsp
  • soy sauce
    3 tbsp
  • sugar
    2 tsp

    Bring 1 cup water to a boil in a small pot . When boiling, add jasmine rice . Cover, reduce to a simmer, and cook until tender, ⏱️ 18 minutes . Keep covered.

    Wash and dry all produce. Meanwhile, halve, peel, and thinly slice red onion . Core, seed, and thinly slice red bell pepper . Trim and quarter baby bok choy , then separate leaves. Mince or grate garlic . Peel and mince ginger .

    In a medium bowl , combine ginger, garlic, soy sauce , sugar , and a drizzle of olive oil . Add beef sirloin tips and toss to coat. Season with salt and pepper .

    Heat a drizzle of olive oil in a large pan over medium-high heat. Add beef sirloin tips and toss until browned and cooked to desired doneness, ⏱️ 3 minutes . Remove from pan and set aside.

    Heat another drizzle of olive oil in same pan over medium-high heat. Add red bell pepper and red onion. Cook, tossing, until just tender, ⏱️ 3 minutes . Add baby bok choy to pan and toss until tender, another ⏱️ 2 minutes . If veggies won’t soften, add a splash of water. Season with salt and pepper.

    Return beef sirloin tips to pan and toss to heat through. Serve stir-fry on a bed of jasmine rice.
