    Halve, peel, and very thinly slice red onion , then mince 1 tbsp. Core, seed, and very thinly slice poblano pepper . Peel sungold kiwi and cut into small cubes. Halve, pit, peel, and cube avocado . Finely chop cilantro . Halve lime . Finely chop chili pepper , removing ribs and seeds if you prefer less heat.

    Heat a drizzle of vegetable oil in a large pan over medium-high heat. Add sliced red onion and poblano pepper . Cook, tossing frequently, until softened and lightly charred ⏱️ 8 minutes . (If you are having trouble getting everything to cook, add a splash of water.) Season with salt and black pepper . Remove from pan and set aside.

    In a medium bowl , combine sungold kiwi , avocado , half the cilantro , minced red onion , and a squeeze of lime . Season with salt and black pepper . Set aside.

    Heat a drizzle of vegetable oil in the large pan over medium-high heat. Add beef stir fry and southwest spice blend , tossing to combine. Cook, tossing, until browned ⏱️ 3 minutes . Season with salt and black pepper . Remove from heat.

    While steak cooks, wrap flour tortillas in a damp paper towel and microwave on high until warm ⏱️ 30 seconds . (Alternatively, wrap tortillas in foil and warm in oven at 425 degrees for ⏱️ 5 minutes .)

    Fill flour tortillas with cooked veggies, beef stir fry , and kiwi-avocado salsa. Dollop with sour cream , then sprinkle with remaining cilantro and as much chili pepper as you like. Serve immediately.
