    Toss specialty cauliflower on one side of a baking sheet with half the cooking oil , half the fajita spice blend , half the salt , and half the black pepper . Spread out evenly.

    Place salmon on the remaining side of the baking sheet. Drizzle with remaining cooking oil and season with remaining fajita spice blend, salt, and black pepper. Roast until salmon is opaque and cauliflower is tender and caramelized ⏱️ 15 minutes .

    While salmon and cauliflower roast, in a medium bowl , combine coleslaw mix , mayonnaise , sour cream , half the cilantro , ½ tsp sugar, ½ tsp salt, and the juice of half the lime . Stir until thoroughly combined.

    Once done, wrap flour tortillas in damp paper towels and microwave until warm and pliable ⏱️ 30 seconds .
