    In a small pot, combine white rice , water , and a pinch of salt . Bring to a boil, then cover and reduce heat to low. Cook until tender ⏱️ 15 minutes .

    While rice cooks, wash and dry produce.

    In a small bowl , combine ponzu sauce , umami ginger sauce , rice wine vinegar , water , and sugar . Stir until combined.

    Heat a large drizzle of cooking oil in a large pan over medium-high heat. Add tofu ; season with salt and black pepper . Using a spatula, press into an even layer. Cook, undisturbed, until browned on bottom ⏱️ 3 minutes .
