    Adjust oven rack to top position and preheat oven to 450°F. Wash and dry all produce. Dice tomato . Roughly chop cilantro . Halve, peel, and thinly slice half of onion . Finely chop the remaining onion. Quarter lime . Halve, core, and thinly slice green bell pepper into strips.

    In a medium bowl , combine diced tomato, chopped cilantro, finely chopped onion, juice from half the lime, and a pinch of salt and black pepper . Set aside. In a small bowl , combine sour cream with hot sauce to taste. Stir in water 1 tsp at a time until mixture reaches a drizzling consistency. Season with salt.

    Heat a drizzle of olive oil in a large pan over medium-high heat. Add ground beef , southwest spice blend , chili powder , and a few big pinches of salt. Cook, breaking up meat into pieces, until browned ⏱️ 5 minutes .

    Once beef is browned, add bell pepper strips, sliced onion, and a pinch of salt to pan. Cook, stirring, until vegetables are tender and beef is cooked through ⏱️ 7 minutes . Add beef stock concentrate and ¼ cup water. Simmer until sauce thickens ⏱️ 2 minutes . Season with salt, remove from heat, and set aside.

    Drizzle flour tortillas with remaining olive oil and brush to coat all over. Arrange on a baking sheet in a single layer. Gently prick each tortilla a few times with a fork. Bake on top rack, flipping halfway through, until lightly golden ⏱️ 5 minutes per side. Watch carefully as tortillas brown quickly.
