Adjust oven rack to the top position and preheat oven to 400°F. Wash and dry produce. In a #small pot{}, combine @jasmine rice{¾%cup}, @water{1¼%cups}, and a pinch of @salt{}. Bring to a boil, then reduce to a low simmer. Cover and cook until rice is tender ~{18%minutes}. Keep covered off heat until ready to serve.

While rice cooks, peel and dice @potatoes{2%units} into ½-inch pieces. Trim, peel, and halve @carrots{2%units} lengthwise; cut crosswise into ½-inch-thick pieces. Peel and mince @ginger{1%unit}. Finely chop @cilantro{1%bunch}. Peel and finely mince or grate @garlic{2%cloves}.

Heat a large drizzle of @olive oil{2%tbsp} in a #medium pot{} over medium heat. Add potatoes, carrot, ginger, @mirepoix paste{2%tbsp}, and @diced skinless dark meat chicken{12%oz}; cook, stirring occasionally ~{5%minutes}. Stir in @tomato paste{1%tbsp}, @veggie stock concentrate{1%unit}, @curry powder{1%tbsp}, water, and @sugar{1%tsp}. Increase heat under pot with veggies to medium. Uncover and cook, stirring occasionally, until sauce has thickened ~{7%minutes}. Taste and season with salt and pepper if desired. Stir in @peas{1%cup} and half the cilantro. Remove from heat. If sauce seems too thick, stir in a splash of water.

While potatoes cook, in a #small bowl{}, combine garlic and olive oil. Microwave for ~{20%seconds}; season with a pinch of salt and pepper. Place @naan bread{2%pieces} on a #baking sheet{}; bake on top rack until lightly golden ~{7%minutes}. Remove from oven; brush top of naan with garlic oil.

Divide aloo matar and rice between bowls. Garnish with remaining cilantro and serve with garlic naan on the side.
