Preheat oven to 425 degrees. Wash and dry all produce.

In a large pan, cook @bacon{4%slices} over medium-high heat until crispy. Transfer to a paper towel-lined plate and drain.

Halve, peel, and thinly slice @onion{1%unit}.

Add onion to the same pan with the reserved bacon fat (if the pan seems dry, add a drizzle of @olive oil{1%tbsp}). Season with @salt{1%pinch} and @black pepper{1%pinch}; cook, stirring occasionally, until browned and softened ~{3%minutes}. Turn off heat.

While onion cooks, brush or rub each @flatbread{2%unit} with remaining olive oil; season with salt and pepper. Place flatbreads (dimpled sides down) on a #baking sheet{}.

Bake flatbreads until lightly toasted ~{3%minutes}. Flip (dimpled sides up) and top evenly with @mozzarella cheese{2%oz}, onion, bacon, and @monterey jack cheese{2%oz}.

Bake again until cheese is melted and bubbly ~{3%minutes}. Transfer flatbreads to a cutting board; drizzle with as much @fig jam{2%tbsp} as you like. Sprinkle with @chili flakes{1%tsp} and serve.
